Slow Cooker Red Wine Pot Roast Recipe – Tender and delicious slow cooked beef roast in red wine sauce made simply in your slow cooker/crockpot. Serve pot roast over mashed potatoes or with your favorite side dishes.
We served our Red Wine Pot Roast over creamy mashed potatoes with steamed broccoli. It was absolutely delicious. I will link a few more side dish ideas to pair with pot roast for you below!
This recipe serves 4-6 people, giving each person a pretty generous portion. If you are cooking for a large crowd, you can easily double this recipe if you'd like!
Store leftover pot roast in an airtight container in the fridge for up to two days. To reheat leftovers, just pop them in the microwave for about 30 seconds to 1 minute. You can also reheat them in a saucepan over medium-low heat on the stove until nice and hot.
What Cut Of Beef Is Best For Making Pot Roast:
We recently used a top round roast in this recipe and it turned out extremely tender and delicious. You can also use a chuck roast, tri-tip roast, brisket or a London broil in this recipe.
They all work amazing and give you a tender pull-apart end result. I would just go with whatever is on sale at your local grocery store.
Ingredients you need to make Red Wine Pot Roast:
Beef Roast – Top Round, Chuck Roast, London Broil, Brisket or Tri-Tip Roast all work great in this recipe! You'll need a 2 pound roast.
Tomato Sauce – You'll need a half cup of tomato sauce for this recipe. You can also use crushed tomatoes as well.
Broth – Chicken, beef or vegetable broth all work great. I love to use bone broth but you can use whichever you prefer!
Garlic – Fresh garlic cloves are best in this recipe! You'll need 3 large cloves. If you are using pre-minced garlic, use about 1/2 tbsp. For garlic powder substitution – use 1 1/2 tsp.
Red Wine – Dry red wine is best – like merlot, cabernet, pinot nior.
Worcestershire Sauce – Adds a delicious flavor to the sauce.
Butter – You can use unsalted or salted butter.
Thyme – Dried or fresh thyme – If using fresh, half the amount.
Parsley – Dried or fresh parsley – If using fresh, half the amount.
Salt – This will be used to season the roast prior to searing.
Black Pepper – This will be used to season the roast prior to searing.
Cornstarch or Flour – To thicken the sauce once finished cooking.
Tools to have on hand:
- cast iron skillet, dutch oven or regular skillet – To sear the beef roast in.
- tongs – For turning the roast while searing.
- cooking spoon – For stirring the sauce while cooking.
- slow cooker – To cook the pot roast in.
- measuring spoons and cups – To ensure all of your ingredients are measured properly.
How to make Red Wine Pot Roast in your slow cooker/crockpot:
Season roast with salt and pepper on all sides.
Heat skillet over high heat and add butter and oil. Once the skillet is very hot, carefully add the beef roast. Sear on all sides for about 30 seconds until you have a nice crust. Transfer seared roast to your slow cooker.
In the same skillet you cooked the roast, add remaining ingredients (except for the cornstarch) and bring to a simmer. Simmer for about 5-10 minutes.
Carefully pour red wine sauce over the beef roast.
Cook in your slow cooker on the low setting for 7-8 hours or on high setting for 4 hours.
When done, transfer pot roast to a plate. To thicken the sauce, pour 1 cup of the sauce into a bowl and whisk in a tablespoon of cornstarch or flour. Pour sauce back into the slow cooker and stir to combine.
Pour sauce over roast and serve with your favorite side dishes. Enjoy!
